1/2 lb. cheddar cheese
1/2 lb. minced ham
2 sweet pickles
1 tsp. grated onion
2 Tbs. mayonnaise or salad dressing
Put cheese, ham, and pickle in food processor or chopper to desired consistency. Stir in onion and mayo.
Note: I rarely ever measure anything with this recipe. If I have a chunk of leftover ham, I just toss it in the food processor with the other ingredients. I also add more mayo than it calls for. It's one of those recipes you just do to your own taste. It's good for cold sandwiches or put some on buns or rolls, wrap in foil, and heat in a 350 oven for 15 min.Title: Recipe(tried): Ham Salad

Here's my grandmother's recipe. She usually substituted hot dogs or bologna for the ham to save money.
Ham Salad (makes 3 cups)
1# ham, hot dogs, or bologna
3 hard boiled eggs
3 Tblsp pickle relish
Mayonnaise
Grind ham (or hot dogs or bologna) and eggs. Add pickle relish and enough mayonnaise to make a spread. Be careful not to add too much mayo or the salad will be watery. Refrigerate and use cold on sandwiches or small breads or crackers. You can also use it hot and make open-face sandwiches topped with cheese--heat it oven until cheese melts and serve immediately.

Mix all ing. well. Cover and chill at least 1 hr.

1 tsp. Worcestershire sauce
1 tsp. prepared mustard
1 c. Cheddar cheese cubes
Mix the above ingredients together and put in a blender. Blend until smooth and creamy. Yield 1 1/2 cups. Class of '94
PIMIENTO CHEESE
2/3 lb. mild cheddar cheese, grated
1/3 lb. Swiss cheese, grated
1 (4 oz.) jar pimientos, chopped &
well drained
1 tbsp. sugar
Dash of salt
Dash of white pepper
Dash of garlic powder
Dash of Tabasco (opt.)
Mayonnaise to moisten (approx. 1 c.)
Combine all ingredients and mix thoroughly. Keeps well for several days in refrigerator. PIMIENTO CHEESE

1 sm. can chopped pimientos
1 egg
2 tbsp. vinegar
2 tbsp. flour
1 tsp. sugar
1/4 tsp. salt
3/4 c. water
Beat egg in saucepan. Add vinegar, sugar and flour, beating constantly on medium heat. As it thickens, add 3/4 cup water. Keep stirring until very thick. Let stand 1 minute. Add cheese and pimientos, stirring well. Put into containers. PIMIENTO CHEESE
1 lb. mild Cheddar cheese

1/2 c. granulated sugar
2-2 1/2 tbsp. vinegar
*1/2 c. Miracle Whip salad dressing
Pinch of salt
Grate cheese. Mash pimentos. Put in medium size bowl. Add salt, sugar, vinegar and salad dressing. Mix thoroughly. *Add more salad dressing, if needed, to make a good spreading consistency. Best if refrigerated overnight before using. Keeps well in closed container in refrigerator 2-3 weeks. Makes 12-15 sandwiches.

2 c. (8 oz.) shredded sharp cheddar
cheese, softened
1/4 c. plus 2 tbsp. mayonnaise
Dash of garlic powder
1 (4 oz.) jar diced pimento, drained
Combine cheeses in a large mixing bowl; beat at medium speed of an electric mixer until light and fluffy. Add mayonnaise and garlic powder; mix well. Stir in pimento. For best consistency, serve at room temperature. To store, cover and chill. Yield: 4 1/2 cups. PIMIENTO CHEESE
1 (8 oz.) pkg. Velveeta
1 (8 oz.) pkg. med. cheddar cheese
1 (8 oz.) pkg. New York sharp cheese
1 c. Miracle Whip salad dressing
4 oz. pimiento, drained & chopped
1 1/2 tbsp. sugar
Salt & pepper
Grate cheeses and let come to room temperature. Add remaining ingredients and mix until well blended. Makes 1 quart.
