Recipe: Hamburger Buns for ABM (repost)

Hi Nancy,

This recipe from our archives calls for melted shortening - you can substitute oil. Also, you can adapt hand kneaded recipes to the machine - especially if you're only using the machine for kneading and will shape the dough and bake in the oven. Just follow these guidelines for the amount of flour your machine can manage. Divide large recipes in half, if necessary, to fit your machine:

1 lb machine = maximum of 2 cups flour
1 1/2 lb machine = maximum 3 cups flour
2 lb machine = maximum 4 cups flour

Hamburger Buns (An old recipe adapted to ABM)

2/3 C. water
2/3 C. milk
2 1/2 TB sugar
1 1/2 tsp. dry yeast
2 1/2 TB melted shortening
4 c. flour (or a little less)
1 1/2 tsp. salt

I soak the yeast in a small amount of water and add a little of the sugar to get the yeast started. Add all ingredients and set bread machine on DOUGH setting.

Shape dough into a rectangle & cut into 12 equal pieces. Shape into buns and let rise 'til dougled in size. Bake @ 350-375 degrees. To prevent buns from getting too dark, lay a large piece of tin foil over them when they reach the desidred darkness.
