Harvard Green or Wax Beans

5 servings

3 to 4 cups water
3/4 tsp. salt
1 1/2 lbs. green or wax beans, washed, trimmed, cut into 1-inch pieces
3 to 4 tbsp. sugar
3 tsp. cornstarch
3 tbsp. cider vinegar
Pimiento

Heat water to boiling, add salt and beans; cook rapidly uncovered, until tender, 20 to 30 minutes. Drain, saving the cooking water.

Mix the sugar and cornstarch. Measure 3/4 c. of cooking water, add to cornstarch mixture and cook, stirring constantly until sauce boils and becomes clear. Add vinegar and pour sauce over beans.

Let stand in warm place about 20 minutes to blend flavors. Add a few strips of pimiento and reheat before serving.
