Recipe: Herb and Nut Crusted Cod Fillets (not Arnie's)

HERB AND NUT CRUSTED COD FILLETS

140g/5oz wholemeal bread,
50g/2oz walnuts, roughly chopped,
3 tbsp chopped parsley,
3 tbsp chopped chives,
Finely grated zest of 1 orange,
1 pinch nutmeg,
85g/3oz butter,
4 cod fillets (175g/6oz) each, skin on,
1 egg yolk, beaten

Preheat the oven 200 degrees C/Gas 6/fan oven 180C. Whiz the bread in the food processor to make crumbs. Mix with the walnuts, herbs, orange zest and nutmeg.

Heat the butter in a saucepan until just melted. Stir into the crumb mixture. Mix well and allow to cool.

Rub the flesh of the cod with salt and pepper. Place skin side down on a baking sheet. Brush the top of cod with the beaten egg yolk and press down the crumbs.

Bake for 15-20 minutes until the fish is firm and the crumbs are crisp.

Serve with tartar sauce.
