HERBED STUFFED SHELLS
1/2 bunch broccoli
2 cups Mozzarella Fresca ricotta cheese
1 egg, beaten
1 tbsp. fresh thyme
1 tbsp. fresh basil
3 cups tomato sauce
12 oz. jumbo pasta shells, cooked al dente, rinsed, cooled and separated
Peel outer layer from broccoli stems and steam broccoli for about 10 minutes.
Cut off flowerets and mince stems.
Place stems in a bowl with ricotta cheese, egg and herbs; mix.
Put a few spoonfuls of tomato sauce in a shallow baking pan. Stuff shells with cheese mixture and place in pan with broccoli flowerets. Top with remaining tomato sauce
Bake, uncovered, for about 20 minutes at 400 degrees F.
Makes 4 servings
