Recipe(tried): Herbed Yogurt Cheese

HERBED YOGURT CHEESE
(Diabetic Friendly)

2 tbsp. chopped fresh parsley
2 tbsp. minced fresh chives
1 tsp. coarsely cracked black pepper
3/4 tsp. salt
1 quart plain yogurt

Stir parsley, chives, cracked pepper and salt into yogurt.

Moisten a coffee filter or double layer of cheesecloth. Place filter in top of a drip coffee maker or cheesecloth in a sieve. Add yogurt, fold top ends over, and let drip at room temperature for 4 hours or overnight.

When cheese stops dripping and feels firm enough to hold its shape, turn out of filter or cheesecloth and refrigerate. Use as a soft spread.
