Recipe(tried): Hi June -- try this almond cookie recipe

Chinese Almond Cookies

1. 1 C icing sugar
1 C shortening or butter

2. 1 tbsp water
1 tsp baking powder
tsp baking soda

3. 1 egg
1 tsp almond essence

2 C all purpose flour
C sliced almonds
24 whole almonds

Preheat the oven to 3500 F.
Cream the shortening, add the sugar in thirds and beat well after each addition.
Mix the water, baking powder and baking soda together. Add this as well as the egg and almond essence to the shortening mixture. Mix well.
Next add in the sliced almonds and then the flour. Mix to form dough.
Roll the dough into a long strip and divide into 24 pieces.
Flatten each piece and place on greased cookie sheet about 2" apart.
Press a whole almond into the centre of each cookie.
Bake for 15 minutes or until golden brown.
