Home-Made Non-Stick Pan Coating>1 pt. vodka/Everclear/alcohol>2 heaping T. liquid lecithin>Put vodka in blender, then add lecithin and whir for two minutes to give lecithin time to be dissolved. Pour back into bottle for keeping in your kitchen cupboard where snooping relatives are sure to find it and be taken aback. Makes for interesting conversations. >Shake before using, and use a tiny corner of a serviette/napkin/paper towel to wipe bottoms of baking pans, muffin tins, cooking sheets, grill racks, etc. Works as well as Pam and the bottle should last well over a year if you cook a lot. Really helps with the cleaning, too. But don't put it into a spray bottle, as the lecithin clogs the spout. -----OR------ Ingredients - 1 tsp liquid lectihin{get from health food store] 1 cup/250 ml./vegetable oilDirections -mix and put in to a spray type plastic bottleand use like you would normally -------OR------This is a slightly different tip given to me by the instructor of a cakedecorating class that I was taking years ago. Grease your pans with crisco and then instead of flour use bread crumbs. I keep a box of plainProgresso crumbs in the house just for this, and have had far better luck in getting large cakes and irregular shaped cakes out of the pans than with flour.
