Recipe: Quick Marinated Olives (food processor)

Generous 1/4 cup extra-virgin olive oil
1/2 teaspoon hot red pepper flakes
1 teaspoon herbes de Provence or dried thyme leaves
3 large garlic cloves
2 cups drained Kalamata or mixed olives
2 bay leaves for garnish (optional)
Heat oil and red pepper flakes in a small (8-inch) skillet over low heat until very warm. Add herbes de Provence and remove from heat.
With food processor running, add garlic cloves and process until minced. With motor running, slowly add oil and process until oil and garlic are well blended, at least 30 seconds.
Pour over olives and serve, garnished with bay leaves, if desired.
Makes 2 cups
