BAKED SWEET POTATOES WITH MAPLE BUTTER AND NUTMEG
6 large sweet potatoes, scrubbed
8 tablespoons unsalted butter, softened
2 tablespoons maple syrup
Kosher salt and freshly ground pepper, to taste
1 whole nutmeg (for a dusting on top)
Bring the heat of a conventional grill to medium-high. Wrap the sweet potatoes loosely in aluminum foil and place around the perimeter of the grill grate. Close the top and roast the potatoes for 1 hour, or until fork tender. (Or bake sweet potatoes in an oven at 350 degrees F until done.)
In a small bowl with a spoon and fork, combine the butter with the maple syrup, salt and pepper, and mix well.
When the potatoes are cooked through and soft, remove from grill, slit lengthwise down the middle and press to "crown." Top teach potato with a dollop of maple butter and with a microplane or nutmeg grater, dust with nutmeg just before serving.
