Recipe(tried): Indian Spinach Salad

INDIAN SPINACH SALAD
6-8 Servings

DRESSING:
1/4 cup white wine vinegar
1/4 cup salad oil
2 tbsp chutney, chopped
2 tsp sugar
1 1/2 tsp curry powder
1 tsp dry mustard
1/2 tsp salt

In a jar or other suitable container, combine all dressing ingredients. Cover and chill. It's best to do this ahead so it's very cold.

SALAD:
8 cups (10 oz) fresh spinach, torn into bite size pieces.
1 1/2 cups unpeeled, chopped apple
1/2 cup light raisins
1/2 cup peanuts
2 tbsp sliced green onion

Place torn spinach in a large salad bowl; top with the rest of the ingredients.

When ready to serve salad, shake dressing well, pour over salad and toss.

It's best to serve immediately as spinach can wilt very fast.
