Recipe: Iowa Corn and Ham Bake

Main Dishes - Pork, Ham
IOWA CORN AND HAM BAKE

1 green or red bell pepper, finely chopped
1 Tbsp. butter or margarine
2 cups corn, frozen, thawed or canned, drained*
1 1/2 cups coarsely chopped ham
1 1/2 cups milk
1 1/2 cups shredded Cheddar cheese
4 eggs, beaten
2 green onions, minced
1/2 tsp. powdered mustard
1/4 tsp. salt (optional)
1/4 tsp. ground black pepper
1/4 tsp. dried thyme leaves

Preheat oven to 350 degrees F. Butter a 7-by-11 inch shallow baking dish.

Saute the green pepper in the butter until slightly softened.

Combine with the remaining ingredients. Pour into the prepared baking dish.

Bake at 350 degrees F for 40 to 45 minutes until set. To test, insert a knife into the center. The knife should come out clean.

*Petite frozen corn works well in this recipe, but you may use any frozen or canned corn.

Good served with: Baked sliced tomatoes, a tossed green leaf lettuce salad with herb dressing and crisp rolls.
