HELEN'S CURRIED CHICKEN
1 medium onion, chopped
1/2 cup celery, chopped
1/4 cup margarine
2 tbsp flour
1 tbsp medium curry powder
14 oz crushed tomatoes
1 medium green pepper, seeded and diced
1 1/2 cups chicken broth (or bovril packets/bouillon)
1/4 cup chopped fresh parsley
1 tsp salt
1/4 tsp pepper
3 cups cooked chicken, diced
1/3 cup raisins
cooked rice
Saute onion and celery in margarine in large shallow pan until onion is soft, about 5 minutes.
Stir in flour and curry, cook 1 minute.
Add tomatoes, and green pepper, cook stirring often for 5 minutes.
Lower heat. Stir in broth, parsley, salt, and pepper. Cover and simmer for 10 minutes.
Add chicken and raisins; heat through.
Serve over cooked rice.
