Jam Sponge Cake
3 eggs
175g of sugar
175g of self rising flour
175g of butter

First, preheat the oven to 180C (360F).
Crack the 3 eggs into a bowl. Then, either get out your electric whisk, or if you don't have one, simply mix by hand with a spoon. Stir (whisk) together until the eggs have formed a pale yellow substance.
Then, get out your scales and tip 175g of sugar onto them. If you don't have scales, this is approx 1/2 a cup full. Pour the sugar into the bowl. Repeat this with both the butter and the flour. Whisk or stir them all together.
Next, get out a baking tin big enough to hold your cake. Most people say use a grease proof spray, but I haven't got one, so I just get a plastic food bag, put my hand inside it, dab the outside in some butter and wipe that round the tray! It works every bit as well as some spray.
Pour your cake mix into the greased tin and pop it in the oven. Leave it in for about 30 minutes.
When you take it out the oven, leave it to cool for 5-10 minutes on a wire rack. When cooled, cut the cake through the middle and spread jam evenly through it. You could then add icing if you wanted to.
