SOMERSAULT CAKE
1 cake mix (white, yellow, spice, or gingerbread)
4 tablespoons butter
1 cup brown sugar, firmly packed
1 cup pineapple chunks
1 cup pecans, chopped
1 cup raisins
1 cup honey
whipped cream (to serve)
Preheat oven to 350 degrees F.
Prepare cake mix batter according to package directions; set aside.
Melt butter in a large iron skillet. Add brown sugar and pat down evenly. Sprinkle pineapple, pecans, and raisins over brown sugar. Dribble honey evenly over the fruit and nuts. Pour cake batter over top.
Bake at 350 degrees F for 35 minutes. Turn out on a plate while still warm.
Serve with whipped cream.
ORIGINAL RECIPE TEXT:
- Put fo' tablespoons er butter in an iron skillet, and when it melts up, add a ginerous cup er brown sugar. Pat it down smooth. Now sprinkle a cup er diced pineapple and a cup er pecans and a cup er raisins.
- Now po' a cup of honey over this, a dribblin hit around.
- Now po' in yer favorite cake mix batter - white, yeller, spice or ginger.
- Bake in a 350 degrees F over fer 35 minutes. Turn out on plate before hit sets up.
- Serve hit up with whipped cream. This'll sho' make 'em foller they noses back ter the kitchen."
