Jane's Favorite Chicken Tetrazzini
Alt.cooking-chien/Jane Dozier/1999
Cook large hen in plenty of water. Let stand in broth overnight in fridge. (I don't do a whole hen--I do pieces that are easy to de-bone!)
Cook 9 oz of spaghetti in chicken broth
While the spaghetti is cooking mix up the white sauce
1/4 lb butter
1/2--3/4 cup flour
1 quart milk
salt and pepper
Drain cooked spaghetti
ADD
1/2 lb American Cheese
1/2 lb Old English Cheese (Or just make this Velveeta, too!)
1 can mushrooms and juice
1 chopped onion
1 chopped pepper
Mix EVERYTHING together and bake at 350 for 30 minutes.
