Recipe: Japanese Red Rice

I doubt this would come out brick red, but perhaps it is a variation on this, perhaps with the beans mashed? This is from the Time-Life series The Good Cook, the dried beans and grains section.

Red Rice

5 cups glutinous rice, rinsed and drained
2/3 cups dried adzuki beans
1 tablespoon salt
3 tablespoons black sesame seeds, mixed with 1 teaspoon salt.

Place the beans in a large pot, and cover them with at least 7 cups of water. Without covering the pot, cook the beans for one and one half to two hours, or until soft. Drain the beans, reserving the cooking water to color the rice.

Combine the rice iwth the beans, 5 cups of the bean water and the salt. Cover the pot and cook the beans and rice over low heat for about 30 minutes.

Serve the mixture on plates or in bowls, sprinkled with the salted sesame seeds. 8-10 servings.
