Recipe(tried): Joe's Chocolate Raspberry Pie - Thank You: And since nothing says THANKS! like...
Desserts - Pies and TartsCass,
Thanks so much for providing my missing recipe! I'll make it soon, possibly later today, and I'll let you know what I think. And since nothing says "Thanks" like chocolate, I'm sending along something I created using odds & ends I had on hand one fine and lovely day. It's quick, it's easy, and it's chocolate --- what more could one want???
Joe
Joe's CHOCOLATE RASPBERRY PIE
1 prepackaged Oreo pie crust
(OR homemade graham cracker or chocolate wafer crust in lightly buttered pie or springform pan [preferred])
2 packages (8 oz each) cream cheese, well softened and beaten with spoon until smooth
6 oz. good quality dark chocolate
(I used two 3 oz packages of Perugina I had around but Lindt or something similar will work well, even chocolate chips)
1/4 to 1/2 cup sugar,
depending on sweetness desired (I use 1/4 cup)
1 large can of 'Ready Whip' canned whipped cream
1 or 2 1/2 pint(s) fresh raspberries
(or whatever sounds good... cherries, strawberries, or mandarin oranges might be excellent too)
Carefully melt chocolate in large bowl, then beat in cream cheese and sugar until smooth and well combined.
Gently fold in about 1 cup of whipped cream, add another cup and fold in gently. Continue doing this until can is nearly empty (or use all if you don't want any for topping).
Fold in fruit until well combined, pour into crust and smooth. Top with chocolate shavings and/or a few reserved berries if you want it pretty.
Chill several hours before serving (putting in the freezer for 30-45 minutes will speed things up).
Serve cold and it's like cheesecake, and if left out for 20 minutes it's more like a cream pie.
Serves 1 at my house, but your mileage may vary ;)
