BECKY'S SWEET POTATOES
Recipe By : BECKY

4 pounds sweet potato -- peeled
water -- to cover
1 tablespoon vinegar

1 pound brown sugar
1 stick butter
2 teaspoons cinnamon

Boil sweet potatoes in water and vinegar until tender.
Remove potatoes from pot stir until creamy.
Add sugar, butter and cinnamon to juice in pot.
Cook on high until mixture starts to thicken like syrup.
Place potatoes in baking dish. Top with syrup. Bake at 350 degrees until warmed through.

You may add toasted pecans on top.

3 cups sugar
3 cups all-purpose flour
6 eggs
2 sticks butter
8 oz. pkg. cream cheese
1 tsp. vanilla extract

Mix sugar, butter, and cream cheese together until well mixed. Alternate putting in 1 egg with 1/2 cup of flour until all of the eggs and the flour has been added. Stir in the vanilla extract. Prepare a large tube or bundt pan by greasing and flouring it well. Pour the cake mixture into the pan and bake at 350 degrees for 1 hour or until center of the cake tests done.

1 bag pretzels
1 cup Brown sugar
1 stick salted butter
1 stick unsalted butter
2 cups chocolate chips
1 cup walnuts
Preheat oven 350 degrees

Line cooking sheet pan w/foil include sides. Spray with Pam.
Line w/pretzels. Melt to boiling point- butter and sugar. Pour over pretzels and put in oven 10 minutes. Immediately spread chips over and sprinkle w/ nuts. Press in... Refridgerate 1 1/2 hours.
Break up..and munch!

1 yellow cake mix with pudding
1 small pkg. chocolate instant pudding
1/2 cup sugar
3/4 cup vegetable oil
3/4 cup water
4 large eggs
1 (8 oz.) carton sour cream
1 (6 oz.) pkg. semi-sweet chocolate morsels.

Combine first 3 ingredients, stirring with a wire whisk to remove large lumps. Add oil and next 3 ingredients, stirring until smooth. Stir in morsels. Pour batter into a greased and floured 12-cup bundt pan. Bake at 350 for 1 hour. Cool in pan completely before cutting.

3 cup sugar
4 cup flour
1 tsp baking powder
3 tsp baking soda
6 ripe bananas
4 large eggs
1 cup canola oil
1/2 cup orange juice
1 1/2 tsp vanilla extract
12 oz. semisweet chocolate chips

Sift all dry ingredients together in a large bowl. Put the bananas into a large bowl and mash at low speed. Add the eggs, oil, orange juice and vanilla and mix for 1 minute at med. speed. Add the dry ingredients, mix till smooth, about 2 minutes Add the chocolate. chips and mix till blended. Pour into a greased and floured 9-inch tube or bundt pan (Can also use 2 loaf pans). Bake at 350 for 1 1/4 hours. Cool on cake rack 15-20 minutes and then unmold. Allow the cake to come to room temp. before wrapping tightly if you are making 2 loaves and saving 1 for later. This cake keeps at room temperature. for about 5 days and freezes well for 3 months, well wrapped.

Gina,.Fla (09:47:34) : FRENCH APPLE PIE WITH NUTMEG SAUCE

8 cups peeled and sliced Granny Smith Apples (3 lbs.)
1/2 cup water
1 1/2 cup sugar
1 tsp vanilla
1 baked 9" deep dish pastry shell
1 cup graham cracker s crumbs
1/2 cup flour
1/2 cup sugar
1/3 cup butter

NUTMEG SAUCE:
In a saucepan combine, 1 egg yolk, 1 cup milk, 1/2 cup sugar
Bring this to a boil stirring constantly. Reduce heat, simmer 1 minute. Stir in 1/2 tsp nutmeg. Serve warm over pie.

PIE:
Place apple slices and water in a pot. Bring to a boil. Reduce heat. Cover and simmer 10-12 minutes. Drain. Stir in 1 1/2 cup sugar and vanilla and set aside. In a bowl, combine crumbs, flour and 1/2 cup sugar. Cut in the butter till it gets course. Transfer apples to pastry shell. Top with crumb mixture and bake at 375 25 minutes. Cool and serve with the warm Nutmeg Sauce.

1/2 lb. unsalted butter, softened
8 oz. cream cheese, softened
2 cup flour
1/4 cup sugar for topping
Filling:
Stir together: 1/2 cup sugar, 1/2 cup seedless raisins, 1 tsp cinnamon, 1 cup finely chopped walnuts.

Cream butter and cream cheese. Beat in flour little by little. Knead dough till all flour is incorporated. Wrap in plastic and refrigerate 1 hour.
Divide dough into two balls. Wrap up 1 ball and refrigerate and roll out the other ball into a circle about 1/16 thick on a lightly floured surface. Cut into 16 pie shaped wedges. Sprinkle filling onto the top and roll up each wedge starting at wide end. Sprinkle with sugar and bake on cookie sheet for 15-18 minutes at 375 degrees F. Makes 32 delicious cookies. These freeze well also.

1/2 cup chopped nuts
2 tsp cinnamon
1 1/2 cup sugar
1/2 cup butter
2 eggs
1 tsp vanilla
2 cup flour
1 tsp baking powder
1/2 tsp salt
1 tsp baking soda
1 cup sour cream
1 apple, peeled and sliced

In a small bowl, mix the nuts, 1/2 cup sugar and cinnamon.
In a mixing bowl, cream the butter, 1 cup sugar till very fluffy. Add eggs and vanilla. The more you cream this, the finer the texture of the cake.
In a separate bowl, measure flour, soda, salt and baking powder. Beat dry ingredients into creamed mixture alternating with sour cream.
Spread half the batter into a greased 9-inch springform pan or 9x13-inch baking pan. Top with apple slices and half of nut mix. Layer the rest of the batter over and sprinkle the rest of the nut mixture over. Bake at 375 for 35 minutes or until done. Cool. Makes 6-8 servings in the 9-inch size or cut into squares in the 9x13 pan for gatherings.

PRALINES
Recipe By : BECKY

1 cup evaporated milk
1 1/2 cups white sugar
1 1/2 cups brown sugar -- tightly packed
1 tablespoon imitation vanilla
4 tablespoons butter -- lightly salted
2 cups pecan halves -- shelled

Lay out a 4 or 5 foot long sheet of freezer paper shiny side up on a table.
Then mix the milk and both sugars in a two quart sauce pan and place over a medium low flame.
Stir the mixture often to keep the sugar from burning.
After the milk and sugar boil it will begin to thicken (soft ball stage).
Allow time for the mixture to become very thick then add the butter and vanilla.
This will cause the mixture to become very thin and it needs to cook until it re-thickens. (almost hard ball stage)

Once the pralines thicken again add the pecans, stir them in, and coat all of them with the
mixture.

Use a 2 tablespoon serving spoon to pour (or spoon) the pralines onto the freezer paper.
Then allow the candy to cool to room temperature which should be around 75 degrees.

1 1/2 cups self-rising flour
2 sticks melted butter (or margarine)
4 eggs, unbeaten
1 cup pecans (optional)
2 cups sugar
1/2 cup cocoa
2 tsp. vanilla extract

Spray a 9X13" pan with PAM. Mix all ingredients together with a spoon. Bake at 350 degrees for 30 minutes.

5 cups milk
2 pkg. (6 oz. size) instant vanilla pudding mix
1 cup sour cream
1 lg. carton ( 16 oz.) Cool Whip
8 large bananas
1 box vanilla wafers

Put a layer of vanilla wafers in a very large pan. Put a layer of bananas on the top of the vanilla wafers. Pour some of the pudding mixture over the vanilla wafers/banana layers. Repeat this until you have used all of the bananas and pudding mixture. Reserve some of the vanilla wafers and crush a few to sprinkle on the top of the pudding.

This is great to take to potluck dinners, church suppers, reunions, etc. This makes a LARGE amount.

2 egg yolks
1 cup granulated sugar
4 tbsp sifted flour
1 cup sour cream
1/4 tsp. lemon extract
1/8 tsp. salt
2 egg whites
1 cup light brown sugar
1 cup chopped pecans
1 baked pie shell

Mix egg yolks, sugar, flour, sour cream, lemon extract, and salt. Cook mixture in microwave on high for 5 minutes, stirring at 2 minute intervals, until thickened. Spoon filling into baked pie shell. Then beat egg whites until stiff and add brown sugar. Stir chopped pecans into egg whites and spread over filling. Bake in 325 degree oven for 15 minutes or until pie is brown.

My former aide used to make this pie for us all of the time!

MOM'S PRUNE CAKE
Recipe By : MOM

1 cup buttermilk
1 teaspoon baking soda
1 1/2 cups sugar
1 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup oil
3 eggs
2 cups flour
1 cup prunes -- steamed and chopped
1 cup pecans -- chopped finely

Grease and flour three 9-inch round cake pans.
Preheat oven to 350 degrees.
Combine buttermilk and soda in measuring cup: set aside.

In a large mixing bowl mix on low speed: sugar, nutmeg, salt, cinnamon and oil.
Add eggs, mixing thoroughly with mixer.
Blend in flour.
Mix on low speed as buttermilk mixture is gradually added.
Stir in prunes and pecans.

Spoon 1/3 of mixture into each cake pan.
Bake for 25 minute or until center springs back when lightly touched.
Cool on wire rack.

MOM'S PRUNE CAKE ICING
Recipe By : MOM

1 cup butter
2 cups sugar
1/2 cup evaporated milk
4 ounces dates -- chopped
1 cup pecans -- chopped

MIX BUTTER, SUGAR, MILK AND DATES.
COOK OVER MEDIUM HEAT UNTIL IT BEGINS TO THICKEN.(softball stage)
ADD NUTS AND STIR UNTIL IT COOLS SOME AND THICKENS MORE.

SPREAD ONTO CAKE.

NOTES : This is an old family recipe. Of course, Mom (Rachael) makes it best. All of us look forward to holidays because we know there has to be a Prune Cake. Becky entered the recipe in the New Orleans-Times Picayune recipe contest. It won an honorable mention and was published in the paper.

Debbie.D.,.AL (09:15:41) : JENNIFER'S GRANNY'S BREAD PUDDING

1 can evaporated milk
5 eggs
2 tbsp vanilla extract
1/2 cup oil
2 cups sugar
nutmeg, coconut, and raisins, if desired

Combine ingredients and mix well. Place one layer of bread in 13 X 9" baking dish. Cover with a layer of the milk/egg mixture. Be sure that the mixture soaks into the bread. Sprinkle with raisins, coconut, and nutmeg. Continue this process until you have three layers. Preheat the oven to 350 degrees and bake for 30-35 minutes or until the custard is set and the bread is semi-firm or springy to the touch.

**Works better with slightly stale or dry bread.

**I used Golden Pecan and Oat Bread and it was delicious!

Mom.44,.FL (09:01:53) : Nancy's Banana Bread

1 1/2 cups flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
1 stick butter melted
3 med bananas, mashed
2 eggs

Mix flour, sugar, baking soda and salt. Mix into mashed bananas. Beat eggs with a fork and mix into melted butter. Mix till just blended. Pour into greased 9x5 pan. Bake in preheated 350 degree oven for 50 min. Will also make about 4 "baby loaves". Bake them about 20 Min.

Margie,.MD (08:50:26) : SHOO FLY CAKE

1 cup brown sugar
1 cup white sugar
4 and 1/2 cups flour
1/2 cup shortening
1/2 tsp salt
1 cup Brer Rabbit Molasses (I use light)
2 cups hot water
1 tablespoon baking soda

Mix sugars, flour, shortening and salt. Take out 3/4 cup of crumbs for topping. Mix the molasses with 1 cup of hot water. Mix the baking soda with the second cup of hot water. Combine all the liquids and add them to the dry ingredients. Stir well. Put in greased 9 x 13 cake pan. Put 3/4 cup crumb topping over mixture. Bake 45-50 minutes at 350 degrees.

Margie,.MD (08:42:34) : CHOCOLATE ZUCCHINI CAKE

1/2 cup margarine
1 and 3/4 cups sugar
1 tsp. vanilla
1/2 cup sour milk
2 and 1/2 cups flour
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. ground cloves
4 tablespoons cocoa
2 cups finely diced (not shredded) zucchini
1/2 cup chocolate chips
1/2 cup oil
2 eggs

Cream margarine, oil and sugar. Add eggs, vanilla, and sour milk. Beat with mixer. Mix together all the dry ingredients and add to the creamed mixture. Beat well. Add zucchini. Spoon batter into greased and floured 9 x 13 cake pan. Sprinkle top with chocolate chips. Bake 325 degrees for 40-45 minutes.

Margie,.MD (08:35:40) : ORANGE SLICE CAKE

Sift together:
3 and 1/2 cups flour
1/2 tsp salt

Combine:
1 pound candy orange slices, cut up
with scissors into small pieces
2 cups chopped walnuts
1-8 oz. package dates
1 cup coconut

Add 1/2 cup of the flour mixture to above fruit mixture.

Cream 1 cup butter or margarine and 2 cups flour. Beat well. Add eggs, one at a time, beating well after each addition. Combine 1 tsp. soda and 1/2 cup buttermilk. Add alternately with flour mixture. Beat well. Add candy mixture. Put into large tube pan or 2 loaf pans. Line the bottom of the pans with greased waxed paper. Bake at 300 degrees for 1 hour and 45 minutes for a tube pan, a little less for the loaf pans.

Combine:
1 cup orange juice
2 cup sifted confectioner's sugar
Mix well and pour over hot cake. Let stand in pan
overnight in refrigerator.

Kelly,WA (08:28:50) : PINEAPPLE UPSIDE DOWN CAKE FROM MOM44

1 cup flour
1-1/2 tsp. baking powder
1/8 tsp. salt
2 large eggs
1/3 cup sugar

Topping
1 tbsp. butter
3 tbsp packed light brown sugar
7 slices juice-packed canned pineapple (reserve 1/3 cup juice)
7 pecan halves

Heat oven to 350 degrees

Put the butter in a 9-inch round pan and place in the oven to melt. Stir in the brown sugar and 1 tsp of the pineapple juice. Arrange the pineapple slices in the bottom of the pan and place a pecan half in the center of each. In a small bowl, mix the flour, baking powder and salt. In a medium-size bowl, beat the egg yolks with an electric mixer until well blended.

Gradually add the granulated sugar and beat until thick and pale. Beat in the remaining pineapple juice, then stir in the flour mix With clean, dry beaters, beat the egg whites in another medium-size bowl until stiff peaks form. With a rubber spatula, gently stir (fold ) the egg whites into the flour mix. Carefully pour the batter into the cake pan and spread evenly. Bake for 25 to 30 min., or until toothpick comes out clean. Set the pan on a wire rack and cool for 5 min. Loosen the edges of the cake with a knife, then invert onto serving plate.
