Recipe: Spiced Roasted Potatoes (using white and sweet potatoes)

SPICED ROASTED POTATOES

1 pound baking potatoes
1 pound sweet potatoes, peeled
4 tablespoons olive oil
2 tablespoons butter
1 teaspoon ground turmeric
1 teaspoon chile powder
1 teaspoon curry powder
1 teaspoon light brown sugar
Salt and pepper
2 tablespoons chopped fresh cilantro (for garnish)

Preheat oven to 400 degrees F.

Place baking potatoes in saucepan, cover with cold water, and bring to a boil. Simmer 10 minutes; drain and pat dry. Leave to cool slightly, then peel. Cut baking potatoes and sweet potatoes into equal-size cubes.

Place oil and butter in a roasting pan and heat until butter melts and is foaming. Add spices and sugar, and stir. Add potatoes to pan, coating them all over with oil and spices.

Roast 40 to 50 minutes until tender. Season well and sprinkle with cilantro.
