Recipe(tried): Homemade Sausage Patties (using pork, beef or turkey, freeze ahead)
Breakfast and BrunchHOMEMADE SAUSAGE PATTIES
(Diabetic and Renal Diet Friendly)
1/2 cup onion, finely chopped
2 Tbsp. vegetable oil
2 tsp. dried sage
1 tsp. ground black pepper
1 Tbsp. sugar or brown sugar
1/8 tsp. crushed red pepper flakes
1 pinch ground cloves
1/4 tsp. ground cayenne pepper
1 tsp. fresh thyme, finely chopped
1 large egg yolk
2 pounds lean ground meat (pork, beef, or turkey)
Cook onion in 2 tablespoons of oil in a small, heavy skillet over moderately low heat. Stir occasionally, until onions soften and begin to brown, 8-10 minutes. Cool 10 minutes.
In a small bowl, combine the sage, black pepper, sugar, crushed red pepper, cloves, cayenne and thyme; set aside.
Place the ground meat, egg yolk and reserved onion in a large bowl and add the mixed spices. Mix well. Form into 16 patties, 2 ounces each.
TO COOK:
Pan fry the patties in a large skillet over medium high heat for 5-6 minutes on each side, or until the internal temperature reaches 160 degrees F.
(If not preparing for anyone with renal problems, you can add salt to taste to the seasoning mixture)
TO FREEZE AHEAD:
Patties can be frozen before cooking and thawed when needed. To freeze the patties, line a cookie sheet with wax paper and place the patties in a single layer on the waxed paper and freeze until solid. Remove from cookie sheet and place in a freezer bag with a piece of waxed paper between each patty.
