Recipe: Key Lime Silk Pie

Jessica, it's me again. This may come close to the texture of the silk pies from Alaska, but it's not a Key Lime. You will need to modify your ingredients, as this is a chocolate sik pie. I haven't made it yet, so good luck if you choose to do so.

French Silk Chocolate Pie

1/4 cup sugar
1 1/2 cup milk
1 tsp. vanilla
1 tbsp. confectioners' sugar
3 tbsp. cornstarch
1 (6oz.) chocolate chips
3/4 c. heavy cream

In saucepan combine sugar & cornstarch. Blend well. Gradually add milk & cook on low heat, stir constantly until mixture comes to boil. (You may need to take off burner mid-way through next step...recipe doesn't say, but you don't want to burn the chocolate.) Add chocolate chips & vanilla, stir until melted & smooth. Pour into large mixing bowl, cover with plastic wrap & cool to room temperature.

In another large bowl, with your mixer, combine cream & confectioners' sugar. Beat until soft peaks form. Beat cooled chocolate mixture at medium speed about 1 minute until light & fluffy. Fold into whipped cream. Spoon into baked crust (or glasses). Serves 10.
