Recipe: korean Todok Salad

Todokmuch'im(Todok Salad)

Ingredients : 1/4 lb. todok (a white root), 1/2 bundle watercress, 1 tbsp. red pepper paste, 1 tbsp. vinegar, 1 tbsp. sugar, green onion, garlic, sesame oil, sesame salt, lettuce

Method :
1. Pound the todok with a mallet and wash by rubbing it with your hands in salt water. Shred it finely and squeeze out the water.
2. Cut the watercress into 2" lengths.
3. Mix the todok and watercress with the vinegar-red pepper paste. Serve the todok salad on lettuce leaves.

Hint : Todok loses its puckery taste if rubbed in salt water. Todok salad, seasoned with vinegar and sugar, will stimulate your appetite. Todok is a low calorie food.
