Recipe(tried): Lazy Lunch

I like lunches that my mother used to make me, like grilled cheese and tomato soup with apple slices on the side(although now I like grilled dark rye and swiss cheese, with some fried onions). My husband believes you cannot call a sandwich a "grilled cheese" unless it is made with Velveeta!
Also, when the garden is ripe, fresh tomato sandwiches on toast with mayo (sometimes BLTs) or onion sandwiches on rye toast with mustard are my favorites!
For lunches on the go (like for work) I like hero sandwiches with salami, pastrami, turkey, provolone, lettuce, tomato, jalapeno peppers or sliced dill pickle, mayo or oil and black pepper...mmm. A little fruit or veggie salad and I'm all set.
Then there are those lazy Sunday lunches. Around noon, after church, we have pancakes, sausage or bacon, fruit(lots of melon right now) and milk and coffee. Or maybe you call this brunch?

Pancakes

1 1/4 cups unbleached flour
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 Tblsp sugar
2 cups buttermilk
1 egg
2 Tblsp vegetable oil
Oil for skillet

Mix dry ingredients. Add wet ingredients and beat into a thin batter. Heat griddle or large skillet to med-high and lightly grease with oil. Pour about 1/4 cup batter onto griddle and spread it around a little. Cook until bubbles form on top. Flip and cook until bottom is golden brown.
To make very light tasting pancakes, beat 2 egg whites until stiff and fold into batter.
Berry cakes: 1-2 cups fresh berries to batter or individually on griddle right after batter is poured.
