Recipe: Leftover Ham - Ham and Cheese Pie

Here's one I had pulled off this site around Thanksgiving, I also was going to use some of my leftover ham to make a quiche or pot pie of some sort but ended up having my hubby request split pea soup so I used it all there:

Ham and Cheese Pie

4 large eggs
1/4 tsp. pepper
1/4 tsp. baking powder
1/2 cup milk
2 cups finely chopped ham
1 cup grated cheese
1-2 roasted red peppers, chopped fine*
1 small onion, chopped fine*
1 tsp. chopped garlic*
1 can (4 oz.) mushrooms, drained*
seasoned salt if desired
1 9" deep-dish pie shell

Put all of the ingredients into a large bowl and beat until blended. Pour
the egg mixture into the pie shell and bake for 40 minutes or until a
toothpick stuck into the center of the pie comes out clean.
YIELD: 1 pie.
