Recipe: Galloping Goulash (using pork, sauerkraut and sour cream)

GALLOPING GOULASH

1/4 lb. bacon, diced
4 cups chopped onions
2 1/2 lbs. lean pork, diced
1 clove garlic, minced
2 tsp. dill weed, divided use
1 tsp. hot Hungarian paprika
3/4 tsp. cracked or freshly ground pepper
1/2 tsp. salt
3 cups sauerkraut, rinsed
3 tbsp. dark brown sugar
2 1/2 cups sour cream
1 tsp. Maggi seasoning (optional)

In a heavy casserole, simmer the bacon, onions, pork, garlic, 1 tsp. dill weed, paprika, pepper and salt until onions are transparent. Add sauerkraut and sugar.

Put the covered casserole in a 350 degree F oven. After cooking 1 1/2 hours, remove from oven and add sour cream, remaining 1 tsp. dill weed and optional Maggi. Bring the whole back just to a simmer (do not boil). Serve without delay.
