Recipe(tried): Liver Dumpling Soup

My Mother-in-law taught us this recipe that she learned to make when she lived in So. Germany as a child. It's sold as an apetizer in resturants there, but we eat it as a meal.

Liver Dumplings

1 loaf day old french bread cut into small cubes
1 lb calves liver (blended till a pudding like consistency)
1 med-lg onion, cubed
3 slices of uncooked bacon, cut into small pieces
1 lg egg
1 TBs dry parsley
S & P to taste
1/4 tsp nutmeg
1 clove garlic

Mix all ingredients together and let stand 1/2 hr.
Shape into balls any where from 2 - 3 1/2" in size, depending on your personal taste. Boil in beef bouillon for 12-15 mins depending on the size. After 12 mins, cut one in half to make sure all the meat is cooked.
Serve in bowl of beef bouillon.
We serve these with cucumber salad, another So. Germany tradition. Enjoy
