Recipe: Pumpkin French Toast (George Foreman Grill recipe)
Breakfast and BrunchPUMPKIN FRENCH TOAST
"We love this for special weekend breakfasts when we spend more time than usual enjoying the first meal of the day. Serve with pure maple syrup, honey, or jam, if you'd like. You can also add some bacon to the grill when the French toast is finished, but then be sure to hit the gym!"
6 large eggs
3 tablespoons canned pumpkin puree (not sweetened pie filling)
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
8 slices white bread
3 tablespoons walnut pieces
Preheat the grill to medium and spray with nonstick cooking spray.
Combine the eggs, pumpkin puree, cinnamon and nutmeg in a wide shallow bowl and whisk until frothy. Dip the slices of bread into the egg mixture, coating both sides well.
Grill (in batches, if necessary; depending upon the size of your grill) for about 3 minutes, until the French toast is crisp and brown on the outside. Sprinkle with the walnuts and serve immediately.
Makes 4 servings
