Recipe(tried): Lou's Chicken Salad

Lou's Chicken Salad

2 cups cooked rice
2 cups cooked, diced chicken
1 cup celery, diced
1/2 cup green olives, chopped
2 Tbsp. chopped green onions
3/4 cup mayonnaise
1 Tbls. lemon juice

Combine first 5 ingedients in a bowl. Mix mayonnaise with lemon juice. Pour over rice mixture. Toss well. Refrigerate until well chilled.


* Add 2 teaspoons of chicken Better Than Bouillon or 2 chicken bouillon cubes in the water when you cook the rice and pepper to taste.
