Recipe: Low Fat Devilish Fish Casserole

Low Fat Devilish Fish Casserole

Makes 4 servings

1 (28 oz.) can stewed tomatoes, with juice, chopped
1 tsp. granulated sugar
2 Tbsp. Worcestershire sauce
1/8 tsp. salt
1/4 cup finely chopped onion
1 lb. boneless white fish of your choice, cut into bite-size pieces
3 bread slices your choice, whole wheat or white, processed into crumbs
2 Tbsp. Parmesan cheese

Combine first 5 ingredients in a medium saucepan. Bring to a boil. Reduce heat. Simmer, uncovered, for 30 minutes until thickened and reduced. Place fish in a single layer on bottom of a ungreased 2 quart casserole dish. Pour tomato mixture over fish. Combine bread crumbs with cheese. Mix well. Sprinkle over surface of casserole. Bake in a 375 degree oven for 20 minutes until topping is golden and fish flakes easily with a fork.
