Recipe: Risotto with Beans and Greens (microwave)

RISOTTO WITH BEANS AND GREENS

1 small onion
1 Tbsp. olive oil
1 cup raw arborio rice
2 (14 oz.) cans low-sodium chicken broth
1/4 cup dry white wine
1/2 of a 14 oz. can small white beans
3/8 of a 6-ounce bag baby spinach
3 Tbsp. Parmesan cheese
Salt and pepper

In 2-quart microwave-safe dish, stir chopped onion with oil until good and greasy. Microwave 3-5 minutes.

Stir in rice; microwave 4-6 minutes.

Stir in broth; microwave 15-18 minutes, stirring every 5 minutes.

Stir in wine (or use more broth); microwave 5-7 minutes, or until liquid has been absorbed.

Stir in beans and greens; microwave 3-5 minutes. Let sit 5 minutes.

Stir in freshly grated Parmesan. Season with salt and freshly ground pepper.

Makes 4 servings
