Recipe: Pomegranate-Glazed Baked Squash and Apples

POMEGRANATE-GLAZED BAKED SQUASH AND APPLES

2 1/2 pounds butternut squash
4 apples (McIntosh, Jonagold, Granny Smith, Gala or Braeburn)
1/2 cup packed light brown sugar
1/2 cup pomegranate juice
2 tablespoons melted butter
1 teaspoon salt or to taste
1/4 cup pomegranate seeds

Preheat oven to 350 degrees F.

Peel butternut squash and cut into 2-inch chunks. Arrange in buttered 13-by-9-inch baking dish.

Cut apples into quarters or slice (with or without the peel) and add to baking dish.

Mix together brown sugar and pomegranate juice. Spread on squash and apples. Drizzle with melted butter. Sprinkle with salt.

Bake in preheated oven 20 to 30 minutes, until soft. Garnish with seeds.

Makes 6 to 8 servings
