Luscious Apricot Squares
Source: Good Housekeeping Cookbook
Makes 16 cookies
2/3 cup dried apricots
1 1/3 cups all-purpose flour, divided
1/2 cup butter or margarine, softened
1/4 cup sugar
1 cup packed light brown sugar
2 eggs
1/2 cup chopped walnuts
1/2 tsp baking powder
1/2 tsp vanilla
1/4 tsp salt
confectioner's sugar
In covered small saucepan over low heat, in enough water to cover, cook apricots 15 minutes. Drain and finely chop.
Preheat oven to 350. Grease 8x8 inch pan.
Into large bowl, measure 1 cup flour, butter or margarine and sugar. With mixer at medium speed, beat ingredients until well mixed and crumbly. Pat evenly into pan. Bake 25 minutes or until golden brown.
Meanwhile, into same bowl, measure 1/3 cup flour, apricots, brown sugar and remaining ingredients except confectioner's sugar. Beat at medium speed until well mixed, occasionally scraping bowl with rubber spatula. Pour over baked layer and return to oven.
Bake 25 minutes longer until golden. Cool in pan. Cut into squares. Sprinkle with confectioner's sugar.
