Desserts - Cookies, Brownies, Bars Here is what I made to take to our son's inlaws for dinner tonight. They are a taste of spring and make good use of the lemons from my parent's tree.
Luscious Lemon Bars
I make this in my food processor, it makes the job nice and quick, but you can use a mixer with the same end result. They seem to work best in a glass baking dish. My family loves these!
For the crust:
1 cup butter or margarine
dash salt
grated zest of one lemon
1/2 cup powdered sugar
2 cups flour
For the filling:
2 cups granulated sugar
1/4 cup flour
grated zest of one lemon
4 eggs
6-8 Tablespoons fresh lemon juice
Preheat oven to 350 degrees F. Place all crust ingredients in the bowl of a food processor. Process just until a dough comes together in a ball. Press into a 13x9 glass baking dish or other suitable baking pan that has been sprayed with non-stick baking spray. Bake at 350 degrees F. for 15 min, or until very lightly brown. Remove from oven and allow to cool slightly while preparing the filling. In the same food processor bowl, process granulated sugar, 1/4 cup flour and the zest of one lemon to combine. Add eggs and lemon juice. Process to combine thoroughly. Pour over partially baked crust and return to 350 degree F. oven for 20- 25 minutes or until just set. Allow to cool, then sprinkle with powdered sugar. Cut in squares to serve.
