Recipe: Macadamia Nut Waffles with Coconut Syrup (Bisquick recipe, 1985)

Breakfast and Brunch
MACADAMIA NUT WAFFLES

2 cups Bisquick Baking Mix
1 cup milk
2 eggs
2 tablespoons sugar
2 tablespoons vegetable oil
1/2 cup coarsely chopped macadamia nuts
Coconut Syrup (recipe follows)
1/2 cup macadamia nuts (for serving)

Combine Bisquick, milk, eggs, sugar, and oil. Beat with hand beater until smooth. Stir in 1/2 cup chopped nuts.

Pour onto hot waffle iron. Bake until steam stops. Remove.

Serve, top with Coconut Syrup and sprinkle with 1/2 cup nuts.

COCONUT SYRUP

3/4 cup cream of coconut (pina colada base)
1 cup light corn syrup

Combine cream of coconut and corn syrup. Heat if desired.

Makes about 12 (4-inch) waffles
