Recipe(tried): Macaroni Salad (using evaporated milk)

MACARONI SALAD

1/2 cup evaporated milk
1/4 cup white vinegar
4 oz. creamy mayonnaise
1/2 cup sugar
16 oz. pasta twists (multi-colored) or your favorite!
2 medium carrots, shredded
1 medium onion, chopped
1 large green bell pepper, chopped)

Mix evaporated milk, vinegar, mayonnaise and sugar. Set aside.

Cook pasta according to package directions. Drain and rinse in cold water until pasta is no longer hot.

Add the well-drained pasta to milk mixture. Stir in carrots, onion and pepper. Toss together and chill overnight. Mixture will be soupy so you must chill at least 6 hours to thicken it up.

VARIATION:
I sometimes add grated sharp cheddar cheese and chives. I then omit the onion.
