MAQUE CHOUX
12 ears corn
1 medium onion, finely chopped
1/2 green pepper, finely chopped
1/4 teaspoon sugar (or more)
2 tablespoons butter, melted
2 tablespoons tomatoes and green chiles
salt and pepper (to taste)
Cut corn from cob, scraping cob to remove pulp.
Combine corn and remaining ingredients in heavy saucepan.
Cook over low heat 20-30 minutes or until corn is tender, stir frequently.
Servings: 6
