ZUCCHINI AND CHEESE SKILLET
Butter (for sauteing)
1 medium onion, chopped
1 tsp. salt (or to taste)
2 zucchini, sliced thin
2 tomatoes, sliced
4 oz. shredded cheese
1 cup croutons or bread crumbs
Melt butter in frying pan; saute onion. Add squash and tomatoes; cover and cook slowly until soft (about 20 minutes).
Add cheese and bread crumbs (I like the Italian flavored). Cover until cheese melts.
