This is a good marinade for cuban chicken and what I use for Lechon asado which is pork, but the marinade is versatile. Mojo would make a pair of Minolo Blanik taste good.
1 tsp salt
1 whole head of garlic roasted - wrapped in aluminum foil and olive oil and roasted in the oven at 350 for 30-45 minutes.
1/3 cup fresh squeezed lemon juice - about 2 lemons
1 lime - Just the juice
1 Sour Orange - Just the juice
1/2 cup olive oil
1 small onion finely chopped
1 tsp Fresh ground black pepper
2 tsp lemon zest
Mash roasted garlic into tsp of salt and then wisk into warmed olive oil, sauteed onion, lemon juice, lime juice, zest & sour orange juice .
Let chicken sit in the marinade for at least 6 hours, then cook in marinade continually basting. I use a turkey injector and inject the bird to keep him moist. You can double up on the marinade for extra basting, or to cook yuca and or potatoes in.....yummy. Make sure to get some of that roasted garlic under the skin of the bird before giving him that golden island tan!! :)
