Recipe: Marinated Mushrooms

1 lb. mushrooms
1/4 cup lemon juice
1/2 cup olive or vegetable oil
2 green onions (with tops) thinly sliced
1/4 cup parsley (snipped)
1 clove garlic, finely chopped
3/4 tsp. salt
1/4 tsp. pepper
paprika (optional)

Slice mushrooms 1/8-inch thick.
Mix all ingredients and pour over mushrooms.
Toss, cover and refrigerate at least 3 hours; toss occasionally.
