Hi,
I will give you the correct recipe of Mdardara:
You will need
2 big onions, cut in cressent shape
2 tablespoons olive oil
2 cups brown lentils (wash them)
1 1/2 quarts water
1/2 (one-half) cup of long rice (wash them)
1 small spoon salt
1 tablespoon (full) sweet pepper
Cook the onions over low heat in the olive oil for three minutes. Then remove 1/2 of the onions and set aside (for the lentils). Continue cooking the remaining onions until they begin to get crisp and red color. When the onion is ready remove from oil and keep aside (for garnish).
Boil the brown lentils in the water, when it become nearly very well coocked add the rice and salt and sweet pepper and the onions cooked for the lentils. Cook for three minutes, mix them and cook over low heat, covered, until rice is tender, about 20 minutes (water should all evaporated).
Put the Mdardara in a big plate and top with the crispy red onions and bon appetit.
n.b: You can eat it with Yogurt (Laban), it is very delicious.
