MEAT LOAF WITH A TWIST
1 (10 1/4 ounces) can Franco-Amerlcan beef gravy, divided use
1 1/2 pounds ground beef
1/2 cup dry bread crumbs
1 egg, beaten
1/2 cup salsa, divided use
6 cups hot cooked mashed potatoes
Mix 1/4 cup gravy, beef, bread crumbs, egg and 1/4 cup salsa thoroughly. In baking pan shape firmly into 8x4-inch loaf.
Bake at 350 degrees F for 1 1/4 hours or until meatloaf is no longer pink (160 degrees F).
In small saucepan mix 2 tablespoons drippings (from the pan, optional), remaining gravy and remaining 1/4 cup salsa. Heat through. Serve with meat loaf and mashed potatoes.
Makes 6 servings
