MEDITERRANEAN BEEF SKEWERS WITH BROILED TOMATOES
FOR THE MARINADE:
1 (4 1/4-ounce) can chopped pitted ripe olives, drained, divided use
2 tablespoons finely chopped onion
1 tablespoon olive oil
2 teaspoons finely chopped fresh mint
1/4 teaspoon salt
1/4 teaspoon ground allspice
1/4 pound beef sirloin, cut into julienne strips
FOR THE TOMATOES:
2 medium tomatoes, cut in half
1/3 cup plain dried bread crumbs
2 teaspoons lemon juice
1/4 teaspoon salt
4 (10-inch) wood or metal skewers (for the kabobs)
3 cups hot cooked rice pilaf (for serving)
In large resealable plastic food bag combine 1/4 cup black olives, onion, olive oil, mint, salt and allspice. Add beef strips. Tightly seal bag. Turn bag several times to coat beef well. Let stand 15 minutes.
Meanwhile, spray broiler pan with no stick cooking spray. Place tomato halves on each corner of broiler pan.
In small bowl combine remaining black olives, bread crumbs, lemon Juice and salt; mix well. Pat about 1/4 cup crumb mixture on top of each tomato half; set aside.
Heat broiler. With slotted spoon, remove beef strips from marinade; reserve marinade.
To assemble kabobs on skewers, thread beef on skewers. Place kabobs on broiler pan. Brush kabobs with marinade.
Broil 6 to 7 inches from heat, turning once, until beef is no longer pink (9 to 12 minutes).
Serve kabobs over rice.
TIP: If tops of tomatoes begin to burn during broiling, spray crumb mixture with no stick cooking spray.
