MELBA RAINBOW
"Soft ice cream blended with Jell-O Peach and Jell-O Raspberry Gelatins provides multi-layered rainbow dessert in less than an hour."
1 (8 3/4 oz.) can sliced peaches
1 (3 oz.) package Jell-O Peach Flavor Gelatin
2 teaspoons lemon juice
2 cups (1 pint) vanilla ice cream
1 (3 oz.) package Jell-O Raspberry Flavor Gelatin
3/4 cup boiling water
1 1/2 cups crushed ice
Drain peaches, reserving syrup. Add water to syrup to make 3/4 cup; bring to a boil.
Combine peach flavor gelatin, lemon juice and boiling liquid in electric blender container. Cover and blend at low speed until gelatin is dissolved, about 1 minute. Add ice cream by spoonfuls, and the peaches. Cover and blend at high speed until ice cream is blended, about 1 minute.
Pour into a large serving bowl, and chill 15 minutes.
Combine raspberry flavor gelatin and boiling water in electric blender container. Cover and blend at low speed until gelatin is dissolved, about 1 minute. Add ice; cover and blend at high speed until ice is melted, about 30 seconds.
Carefully pour into bowl over creamy mixture. Chill until set, about 30 minutes.
Makes 5 cups or 10 servings
