Recipe: Cocada Pudding (no eggs)

COCADA PUDDING

3/4 cup sugar
3/4 cup water
1 (3-inch) cinnamon stick, broken up
1/4 cup shredded coconut
2 1/4 cups milk
4 tablespoon cornstarch
1/3 teaspoon salt
1/2 teaspoon vanilla

Simmer sugar, 3/4 cup water and cinnamon stick for 10 minutes; strain.

Return liquid to pan.Add coconut and simmer 5 minutes. Remove pan from heat and let mixture cool a few minutes then stir in milk.

Mix cornstarch and salt blend into coconut mixture. Bring it to a boil; boil 1 minute. Remove from the heat and stir in the vanilla. Chill in refrigerator.

I found this recipe by chance...Mine doesn't take eggs.
