Hi Chris,

I'm fairly sure you should be able to substitute the coconut. Could it be the sugar-water mixture didn't cook into a syrup in the first step before the coconut was added? I wouldn't keep adding coconut because that may make the finished custard too dense. You can try straining the mixture and recooking the liquid portion until it thickens before adding back in about half of the coconut. I hope that's a help!
