Recipe(tried): Mexican Style Stuffed Potatoes

Last night I made these and they turned out pretty good, my DH loved them he is a big fan of anything Mexican food style. We ate ours with taco sauce and sour cream along with a green salad with a Serrano Ranch Dressing from El Torito Restaraunts.

Mexican Style Stuffed Potatoes
Bon Appetit

4 medium potatoes

1/2 cup milk
1/4 cup chopped fresh cilantro
1/4 cup chopped green onion
1/3 cup crushed doritos
1 cup packed shredded mexican blend or cheddar cheese
salt and pepper

Preheat oven to 425 degrees. Scrub potatoes, then prick all over with a tooth pick. Bake for one hour and 10 minutes or until tender. When potatoes are cooked slice of top 1/4 of potato and scoop out potato into a bowl leaving the potato with a 1/4 inch skin left. ( I tossed the sliced off tops there wasnt much potato to them)
Mash potato with milk then add remaining ingridients and season generously with salt and pepper. Stuff mixture back into potato shells and back at same temp for 20 minutes.

NOTE: Next time I'm going to season them more by adding some garlic poweder and maybe some chili powder and a pinch of cumin. Also I think you could easily leave out the Doritos, they didnt have much of an effect on the flavor.
