TACO SALAD
1 lb ground beef
1 chopped onion
1 (16 oz) can stewed tomatoes
1 cup grated cheese
lettuce
Fritos
Brown meat and onion. Stir tomatoes (including juice).
Into a large bowl, grate cheese; add lettuce and Fritos.
Pour the beef mixture over the lettuce, cheese and Fritos. Serve at once.
VARIATION:
For a variety use a can of pinto beans in the meat or serve a avocado with the salad.
FRITO PIE
1 regular size pkg. Fritos (save 3/4 cup to layer on top)
1 lb. hamburger meat, browned & drained (optional)
1 (16 oz.) can chili (no beans) heated in saucepan
1 large onion, chopped
1 1/2 cups shredded Cheddar cheese, divided use
Using medium baking dish, layer Fritos, hamburger meat (if using), chili, onions and 1 cup cheese. Top all with remaining 3/4 cup Fritos and cheese.
Bake uncovered in 350 degree F oven for 20-25 minutes until cheese is melted.
