Sorry I haven't replied sooner. I've had shingles this past week and didn't get around to the beets.
What I did today was strain the liquid fom the jar of pickled beets, heat the liquid and add a little cornstarch mixed with some water and add that to the liquid. When that thickened, I added 2 tsps. of butter. After it melted I tasted the mixture and it was very sweet, so I added about 2 tsps. of vinegar, then added the beets, heated the whole thing and voila', harvard beets.
