Mock Apple Pie
This is for real. Absolutely NO apples. I have made this pie many times. This recipe was popular in the US during WW II when apples were hard to get. This really tastes, feels and smells like apple pie.
2 cups water
1 1/2 cups sugar
2 tsp cream of tartar
22 Ritz crackers
Pie Dough for a two crust pie
1/2 tsp nutmeg
2 tbsp lemon juice
Combine water, sugar, and cream of tartar in a saucepan and bring to a boil. Add crackers and boil 1 1/2 minutes.
Roll out 1/2 the pie dough and fit it in an 8 or 9-inch pie pan. Turn the cracker mixture into the pie shell. Sprinkle with nutmeg and lemon juice. Roll remaining pie dough, fit over the filling, and crimp the edges. Cut slits in the top crust.
Bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees and bake for 20-30 minutes or until crust is brown.
